Berry and Nutella Pancakes
With pancake day coming up, I decided that I had to post my go-to pancake recipe! I use this easy crepe recipe most Sundays and it always turns out great.
You could use the pancake recipe with any toppings you like, but my personal fave is this Nutella and berry combination. You can’t beat berries and chocolate!
FOR THE PANCAKES:
160g (1 cup) gluten free plain flour (I use doves farm)
240ml (1 cup) milk (or dairy free alternative)
A pinch of salt
FOR THE TOPPING:
Combine the flour and salt in a large bowl. Make a well in the centre, and crack the egg into the well.
Pour in the milk, and whisk all of the ingredients together so you have a light, thin batter.
Heat a little vegetable oil in a frying pan over a medium heat. Pour in enough of the batter to cover the base of the frying pan.
Cook for 1-2 minutes on each side of the pancake.
Once cooked, spread around 1tbsp Nutella over one half of the pancake, and place 3-4 raspberries and 3-4 blackberries on the Nutella side.
Fold your pancake and serve immediately.
